Lime Pepper Salmon and Sauteed Cauliflower "Rice"

We had been talking about posting a meal including salmon for a 
while, but for one reason or another, we hadn't gotten around to
 making it yet. This was a little surprising, being that we both 
absolutely love salmon. So, after weeks of whining to Bill that I 
was craving salmon, we finally decided to grab it for dinner one 
night and prepare it for the Blog. We typically will prepare it with 
Hayley's Famous Marinade, but for this dish, we created something 
a little more simple, and a little faster to put together. Olive oil, 
salt, pepper, and the juice of one fresh lime. Couldn't be easier 
than that, right?




















For a side dish, we made another favorite of ours that we hadn't
 gotten around to yet. (Our apologies to my Aunt Justine. She
 has been begging us to post this recipe since we started the Blog.)
 So sorry Aunt Justi, it's finally here! This cauliflower "rice" is
 extremely simple to make and tastes absolutely amazing. We
call it "rice", but the consistency is a little more like couscous,
you would never guess that it is actually cauliflower. This side
 dish is fantastic with shrimp, chicken, pork, beef, tuna, white
fish, or with other sauteed vegetables. The recipe we are
presenting to you, is how we typically cook our cauliflower
 "rice", but get creative and make your own favorite rice dish
with cauliflower as your medium. We would love to hear other
 ideas on how to prepare this dish!

For the Salmon

Ingredients:
  • Wild Salmon fillet. (for information on why it's best to
  •  chose wild over farm raised please click here.)
  • 1 lime
  • 1/2 to 1 whole tablespoon Extra Virgin Olive Oil
  •  (enough to lightly coat the salmon)
  • Salt and Pepper to taste





















Process:
  1. Preheat oven to 400°.
  2. Rinse salmon under cold water, and pat dry.
  3. Lightly rub salmon with olive oil.
  4. Sprinkle with salt and pepper.
  5. Broil salmon (on a broiler pan) at 400° for 15-20 minutes.
  6. Remove from oven and squeeze the juice of one lime over 
  7. the salmon.
















For the Cauliflower "Rice"

Ingredients:
  • 1/2 head of cauliflower (this makes a lot)
  • 1/2 of a vidalia onion, chopped
  • 1 clove of garlic, minced
  • 1 tablespoon coconut oil
  • salt and pepper to taste

Process:
  1. Wash cauliflower under cold water and let dry, or pat with 
  2. a towel to remove moisture.
  3. Remove the stems, and place florets in a food processor or 
  4. high speed blender.
















  5. Pulse the florets until you have created a 
  6. couscous-type consistency.
  7.  (Another way to create this is to use a 
  8. cheese grater and grate the 
  9. cauliflower.)
















  10. Place in a microwave safe dish and cover, but do not seal the lid.
  11. Microwave on high for 1 minute 30 seconds, and stop to stir half
  12.  way (do not over-cook the cauliflower or add liquid to it. This
  13.  will turn it to mush).
  14. While cauliflower is in the microwave, spray frying pan with 
  15. cooking spray and saute chopped onion and minced garlic.
  16. Once onion is tender, add in the grated cauliflower.
  17. Add 1 tablespoon coconut oil, salt, and pepper, and saute until 
  18. you have reached your preferred "done-ness". This typically only 
  19. takes a few minutes, and it helps to taste the cauliflower. You 
  20. want it to have that couscous-like consistency (not mushy).
For the eats:






















Plate the cauliflower "rice" and salmon and dig in! This dish was absolutely
 amazing. The salmon had a warm buttery flavor with the slightest
hint of lime. The cauliflower "rice" was a delicious addition to the
 salmon, with its peppery garlic flavor, a hint of coconut oil, and
chopped onion for added texture. Try this meal on your own, or
surprise a dinner guest with the faux rice. They are sure to be in
awe of your creative cooking abilities!
